Highly trained and experienced pastry chef Joanna Clarke is the talent behind Cake Design by Joanna Clarke. She has always had a great love of food and was fortunate enough to grow up in a family that regularly visited Michelin starred restaurants. She changed career path in her 30s, securing an apprenticeship in a 2 AA rosette restaurant.
Since then, Joanna’s working history includes award-winning restaurants and country house hotels where she's held positions from Pastry Chef de Partie to Head Pastry Chef. Joanna holds a Grande Diploma in Patisserie and Confectionery from Westminster, London. During this time, she trained under Chef Yolande Stanley MCA. She is also a member of The Association of Pastry Chefs and the British Sugarcraft Guild. Additionally, Joanna regularly attends masterclasses around the country to extend her and build upon her skills.
From her design studio and professional kitchen in Crowborough, East Sussex, Joanna uses her talent to create beautifully crafted bespoke wedding cakes that embody her high level of skill in both sugar and chocolate floristry craft. Her perfectly moist and beautifully designed cakes include handmade fillings and syrups created from her own personally developed recipes.
Joanna works closely with every wedding couple to create the perfect cake to complete their special day. She desires to give the couple the wedding cake they dream of that not only looks stunning but tastes divine. Couples who dream of an alternative wedding cake can be catered for too -- Joanna specialises in French Classical Croquembouche, filled with light mousseline and creams, which can be traditionally decorated with nougatine and Royal Icing on request.
