The obvious choice for a green theme is to include natural leaves and foliage in your day. If you’re brave enough to forget the flowers, using green thistles and ivy makes for a striking display. Or if you pine for a flower, a natural pairing is white. Choose simple pure white blooms to stand out.

5 Star Weddings: As an ex catwalk model, what top tip would you give to nervous brides walking down the aisle?

Michele Paradise: Slow down!  This is what I tell models that I train and brides as well.  Brides spend many months planning the wedding, dress fittings, hair, make up, shoes and the rest.  Then they get to the moment when they are about to walk down the aisle and get nervous, lose their composure, and rush down the aisle.  The aisle is like a catwalk.  Everyone is waiting for you to arrive so that they can see what you look like.  What is she going to be wearing? What is her hair style? Big dress?  Slim dress? Veil or no veil?  Will she be smiling?  Will she be nervous?  It’s a bit like a fashion show, so give everyone a chance to absorb the moment and admire you and your style.  Some aisles are not very long so it doesn’t give people much time to see you.  So, take your time.  Keep your head up.  Smile at everyone and they will smile back at you.

5 Star Weddings: How important is it to consider your posture on the big day?

Michele Paradise: In my world, good posture is everything.  Without it clothes do not look good.  When designers start making clothes, they work with dressmaker’s dummies (not a great term!) and their posture is very good so clothes are made to be worn with great posture as they drape better.  When you’re a bride, in particular, there is a lot of emphasis on the head and shoulders and so many bridal dresses are strapless so your shoulders are very much on show.  If you have bad posture, it ruins the line of the dress and more importantly makes you look old.  Bad posture is one of the most aging things for a man or woman, so good posture makes you look younger, thinner and more confident.  Bad posture ruins so many photos that I see of brides, and it’s one of the easiest things to fix if you know how.  I’ve got a great product called the Posture Wand that quickly and easily improves the posture with a bit of practice.

5 Star Weddings: What did you find was the most exciting part of having a modelling career?

Michele Paradise: Travelling.  Of course I wanted to wear glamorous clothes, walk down the catwalk and meet fantastic people but my real desire was to travel and see the world.  I grew up in the USA and although it is a big country, I wanted to see other countries, learn about different cultures and experience as much as I could about the rest of the world.  It worked.  I travelled a lot when I was a model and had the privilege of living in Paris and several cities in Italy, my spiritual home.  I also saw a lot of airports and hotel rooms, and didn’t always get the chance to explore the city I was in, but that was a small price to pay for all the weird and wonderful experiences I had.  The most exciting trip I ever took was on Concorde with the Prince and Princess of Wales when Princess Diana was still alive.  We were doing a show in Vienna, which was a salute to British fashion and industry and, as Concorde was partially built by the British, we had the pleasure of flying on it with them.  Princess Diana was really into fashion, and when we met her afterwards she had loads of questions and especially wanted to know how we changed so quickly.  Travelling and meeting amazing people was certainly the most exciting part of my career.

5 Star Weddings: Who’s your favourite bridal designer?

Michele Paradise: Jenny Packham. When I was a model, I had the pleasure of modelling for her and later I was part of her casting team that chose the models for her designer shows.  She is also a very grounded, genuinely nice woman who understands the feminine figure very well and knows how to inject romance into her bridal designs.  Her dresses have such great movement and understated sexiness.  What I love about her bridal dresses is that they are elegant, glamorous, and edgy all at the same time.  As I like a bit of drama in my clothes, I would love to wear one of her bridal dresses if I was getting married.  Her dresses take me back to Hollywood glamour from the 1950s and I love that.  If I could choose another time to live in, that would be it. 1950s Hollywood with Grace Kelly, Elizabeth Taylor and Marilyn Monroe…so glamorous.

5 Star Weddings: Given the choice of a church, beach or castle wedding, which would you choose?

Michele Paradise: I like all three of them as they would appeal to different parts of my personality.  If I had to choose, it would have to be a castle wedding.  I love the idea of a long, sweeping stair case where I could make an amazing entrance.  I would take my time and walk slowly and elegantly down the stairs looking at my friends and family and enjoying every moment.  If I had spent a lot of my time and money planning the wedding, I would make sure that I took my time.  It only happens once and you don’t get a chance to go back and do it again!

5 Star Weddings: What’s the biggest mistake you’ll see brides make in their wedding photos?

Michele Paradise: The biggest mistake that most brides make in their wedding photos is that they don’t know how to stand to give their body shape, movement and look slimmer.  White is a very unforgiving colour, which is why so many women wear black.  White actually creates a ‘halo’ effect and makes the bride look bigger.  The best way to change this is to stand at an angle.  If you stand with both feet side by side and your arms are stuck to your side, you will end up looking like a meringue!  So, stand at a three quarter angle.  Place your feet in the shape of a ‘T’ with the back foot horizontal and the front foot vertical.  Put the heel of the front foot in the arch of the back foot.  This will create the ‘T’ shape and this will give the body shape and movement.  It will also give the bride the opportunity to move more easily as she is able to pivot on her feet instead of being planted in the ground.

5 Star Weddings: What’s the most extravagant wedding you have been to?

Michele Paradise: Hands down it was the wedding of the son of Elizabeth Taylor, Chris Wilding.  It was several years ago now but I’ll never forget.  It was in Beverly Hills and so star studded that I didn’t know where to look.  It was like being on the set of a Hollywood film and t
he best part was that everyone was so relaxed and normal and treated me like I was an old friend.  The venue was like a Hollywood set, the food was fabulous and rubbing shoulders with Elizabeth Taylor and her chums was unlike anything I’ve ever experienced.  It truly was a 5 star wedding!

A for Advice

Seek advice from a variety of sources such as the internet, wedding fairs, recent brides, venues, vendors and leading wedding publications and directories such as the Elizabeth’s Cake Emporium. Ultimately, one to one meetings is still the best way of finding a talented cake artist to help translate your ideas into reality.

B for Baker

Get the names of a number of recommended cake designers, ring them up, visit their websites to get a feel for their ‘style’ and pay them a visit. Write down any questions you might have and feel free to ask away. Remember to take your other half along once you’ve narrowed your choice down, especially for the consultation and tasting, for which you might be charged a nominal charge.

C for Chemistry

Just like any other relationship, no matter how talented a cake designer is, there should be a positive chemistry between both of you. He or she should be finely attuned to your requirements and should be able to guide and steer you in the right direction, making helpful suggestions on possible designs, flavours and fillings.

D for Design, Decorations and Dietary Requirements

Even of you don’t have a particular cake in mind, or even a photograph, make a collage of all the things that inspire your style and take it along to your cake maker. It is important for you to have an idea of your colour scheme/theme of your wedding before planning the cake.
In terms of the cake design, a talented cake designer can match the details on your wedding dress for instance or the exact colour of your bridesmaid dresses if you provide a swatch of the fabric. If you are vegan, vegetarian or have certain allergies/ special dietary requirements, please let the cake maker know, so this can be taken into consideration. It is possible to have great tasting and looking cakes that suit every dietary requirement.

E for Etiquette

Read up on wedding etiquette, so you know who has responsibility for paying for what. In some cultures, it is normal to also have a groom’s cake at the wedding, so ensure that you are clued up as to what is the right thing to do. Timing the cutting and serving of the cake is also critical. Get your wedding planner to liaise with the venue and kitchen ahead of the big day.

F for Flavours and Fillings

Gone are the days when wedding cakes were heavy, stodgy fruit cakes. You now have a choice of a variety of luxurious and delicious flavours. H for Hire costs

Just like it is essential to choose the right accessories for your wedding dress, the right accessories and how a cake is displayed can make all the difference. However, the right accessories tend to come at an extra cost, so make sure you bear this is mind when discussing your requirements.

I for Icing

The icing on wedding cakes includes royal icing, sugar paste, ganache, chocolate wraps and buttercream. If you have a particular preference, let your cake designer know, although it is worth noting that a particular design or look may only be achieved using a particular medium.

J for Judgement

Trust your instincts and the evidence when choosing a cake designer. It is better to go for a less elaborate cake that will be delivered on time, to cost and to standard than to go for a badly executed elaborate cake.

K for Kids

If you will be inviting a lot of children to your wedding consider having a separate table for them with their own mini wedding cake. It is gestures like this that help to make weddings memorable.

L for Leftovers

In the old days, it was customary for brides to save the top tier of their wedding cake for their first wedding anniversary or the birth of their first child. You can, of course, do this, and at Elizabeth’s Cake Emporium, we offer you advice on the best way to preserve your top tier should you wish to do so.
Some brides choose to give individually packaged cupcakes to family and friends as an edible memento of such a special day. We have also worked with some ethically conscious brides who donate leftovers to organisations such as homeless shelters (however you have to make sure that this is acceptable for health and safety reasons).

M for Marzipan

Commonly used by cake decorators to cover fruitcakes, it is made from almonds and has a sweet, distinctive taste. However, be aware that some of your guests might be allergic to nuts in any shape or form and it is advisable to warn such guests.

N for Notice

It’s best to give your chosen cake maker as much notice as you can, preferably a minimum of six months’ notice. This will ensure that there is enough time to discuss and execute every detail of the design and content of your cake and there is also enough time for the designer to incorporate any changes. Having said that, you will find that some bakers can accommodate time constraints if you enquire very nicely.

O for Order

As soon as you can, obtain a written quote on aspects of the cake design, the number of tiers, delivery costs, hire charges and other details. This will give you time to see if every requirement of yours had been noted accurately and to raise other issues that you might have.

P for Price

While it is advisable to shop around for the best price in order to get value for money, you may have to pay a premium for a particular cake designer’s brand, design, experience and reliability.

Q for Quality

You want you to cake to accurately reflect your sense of style and elegance. When looking at wedding cakes, pay attention to details such as the finishing touches, how cakes are displayed and the accessories to ensure that they are what you require.

R for Reception

As the cake will take centre stage at the reception, discuss possible display areas and how the table will be dressed with your event planner and cake maker. If for instance the cake will be iced in buttercream for a summer wedding, it is advisable not to display the cake in a hot room or place it near a window.

S for Size or Servings

The size of the cake should be appropriate to the number of guests. So if you are expecting hundreds of guests, you will need several cake tiers. However, to save money, you can be creative by copying a practice in China whereby a Styrofoam cake is hired for the cutting ceremony but a plainly iced cake is served to guests.

T for Tastings

Some wedding cakes can be a case of style over substance. It is important that your cake tastes as good as it looks. A good cake maker will offer you a tasting of a variety of flavours of cakes from which you can make your choice.

U for Unusual

If you want something a bit unusual and off the beaten track, some cake makers such as Elizabeth’s Emporium will happily design a one-off cake for you. For example, the current trend is the cupcake tower, where hundreds of cupcakes are displayed in multiple tiers. The advantage of a cupcake tower is that it is easier to serve the wedding cake as dessert saving on cost.

V for Value Added

As you would be spending quite a considerable sum of money on your wedding cake, choose a cake maker that will contribute something special towards making your wedding great. It could be lending you an unusual cake knife, a great cake stand, a fabulous table cloth or even being a surrogate therapist.

This is a great source of ideas for your wedding cake and you will instantly know if you like or dislike a particular cake designer’s work.
