Master pastry chef Sal De Risio created this impressive masterpiece, leaving an indelible mark on the hearts of Francesco, Giusy, and their cherished guests.

Elizabeth’s  Cake Emporium is absolutely thrilled to announce that a few months ago, we were commissioned by Searcys to create a modern version of the wedding cake for Queen Victoria’s granddaughter, Princess Maud of Wales. 

The Process When we were approached to design and create this cake, we dug into the archives and found a sketch and feature in Tatler magazine about the royal wedding cake which provided us with a great reference image.

The royal wedding was such a big occasion that it brought the company’s founder, John Searcy, out of retirement in 1896. Now, Elizabeth’s Cake Emporium has recreated the cake for the company’s 175th celebration by adding a modern twist.

The original cake was a two-tier cake on a raised pedestal surrounded by sugar angels and lions, with cherubs holding the basket topper aloft. The cake was also adorned with sugar roses, other sugar flowers, sugar leaves, sugar berries and sugar fruit. It also featured the royal crests of Britain and Denmark.

The first step in our creative process was the cake design. We knew we wanted a grand wedding cake fit for a princess so we opted for a 7-tier cake with the bottom two tiers entirely covered with sugar flowers, sugar cherubs we created special moulds for, sugar fruit and sugar leaves. 

For the rest of the streamlined tiers, we kept the intricate latticework design on the cake, trimming the bottom and top edges of each tier with gold piping. We also used certain sugar flowers for their symbolic meaning such as daisies for innocence, purity and humility, and of course, the rose national flower of England,  with its long tradition within English symbolism.

The creation of this royal wedding cake took over 200 hours of solid work at Elizabeth’s Cake Emporium, where we hand-made over 5,000 individual sugar flowers, petal by petal, the sugar leaves, the cherubs and the sugar fruit.

We also sourced different cherub moulds and also created larger custom moulds, sculpting the shapes before casting them using food-safe silicone.

The Result

The result was a stunning 4-foot-tall wedding cake nearly 3 feet wide topped with a basket shape filled with sugar flowers and sugar fruit. John created everything out of sugar and I did the same, from the intricate quilted basketweave design to the sugar flowers, fruit and sugar cherubs.

In keeping with most extravagant weddings at the time, the cake flavour was a fruit cake, Dundee cake, although the cake is available in other flavour preferences.

The cake will travel across Searcy’s restaurants throughout the summer starting on 17 May which is National Baking Day. Diners will be able to have a sample at venues including 116 Pall Mall, The Pump Room in Bath, St Pancras Brasserie, and Searcys at the Gherkin.

A Little More About Princess Maud’s Wedding

Princess Maud wed Prince Carl of Denmark in a Private Chapel at Buckingham Palace on July 22nd 1896. Guests at the wedding included Queen Victoria, the grandmother of the bride, the Prince and Princess of Wales, her parents, and the Crown Prince and Princess of Denmark. Carl and Maud were offered the crown of Norway in 1905 and accepted after a referendum showing popular support for their rule. They became King Haakon VII and Queen Maud on November 18th 1905.

The cake wasn’t the only thing considered extravagant at the wedding. The bride, the daughter of the future King Edward VII (Prince Edward at the time), wore an extravagantly designed wedding dress. Made from white satin, the dress was adorned with chiffon flowers at the skirt hem and had a long train bordered with orange blossoms. It’s believed the waist was embroidered with silver and diamonds and the bride’s veil measured 6.4 m (21 feet) in length.

We’ve been spoiled with two royal weddings this year. Both held at St George’s chapel in Windsor, but each taking on their own personality, defined by the couples and their passions. This was the first wedding this century with a royal bride, with only the weddings of royal grooms Harry, William and Charles in recent memory. I adore the chance to celebrate a wedding, so here are my top three moments from the day.

Eugenie’s dress

This has to be top of everyone’s list, the most anticipated fashion choice and one that sets the tone for the rest of the day. We already knew Eugenie would choose a British designer and London-based Peter Pilotto was her final choice. Designers Pilotto and Christopher De Vos worked closely with Eugenie as they incorporated a folded neckline to reveal her scoliosis surgery scar and a beautifully wrapped flowing train.

The dress featured embellishments that were special to the princess and her new husband; a thistle for their love for Balmoral, a shamrock to acknowledge Eugenie’s roots, and a rose and ivy to represent the newlyweds’ home. Eugenie beautifully accessorised her dress with a classic mix of something old and something new, with her tiara, the Greville emerald Kokoshnik tiara, lent by the Queen and diamond and emerald drop earrings – a wedding gift from Jack. No veil for Eugenie, which may have been a wise choice on such a windy day! But a definite splash of her personality, making sure her scar would be seen. She said, “I think you can change the way beauty is, and you can show people your scars and I think it’s really special to stand up for that.”

The walk

There is so much glorious anticipation in the bride’s walk down the aisle. The first glimpse of the dress, the reactions of the guests, caught up in that single moment, the face of the groom, unable to contain his delight and the words that he speaks when his bride reaches the end of the aisle. I loved all those moments in Eugenie and Jack’s wedding, especially the moment at the end of the aisle when Jack told Eugenie, “You look perfect.” Ahh….

The family

It is such a special occasion when the royal family joins together to celebrate and I just can’t get enough of it. The clear joy in the faces of the family reminded me that, just like any other family, they were so excited to witness the marriage of their cousin, niece, daughter and grandaughter. Looking stunning in their designer outfits, the royals were a spectacular sight to behold. (I also love the fact that, at the time, no one knew there was a secret extra royal baby in the picture!)

And the rest…

So many beautiful moments of the day – I loved the autumnal hues of the flowers, the gorgeous red velvet and chocolate cake and the giggling bridesmaids and pageboys. But overall, it was a wonderful celebration of two people in love. Here’s to the happy royal couple, wishing them a lifetime of adventure, love and laughter.

Princess Eugenie of York, the Queen’s granddaughter and ninth in line to the throne, marries her fiancé Jack Brooksbank on the 18^thOctober at the same chapel Harry and Meghan declared their vows in a few months ago. They were engaged in January on a trip to Nicaragua, with Jack proposing with a beautiful pink sapphire ring surrounded with diamonds. Since then, planning has been in full swing for the couple. We adore a royal wedding, so here are a few of our thoughts and predictions for the big day.

The dress

In an interview with Vogue, Eugenie said that as soon as they announced their wedding, she knew exactly who she wanted to design her dress, and what it would look like. She’s set her heart on a British designer, but we’ll have to wait and see which one. She chose an Erdem dress to wear for the engagement photos, but she may go for Ralph & Russo, who designed the Duchess of Sussex’s engagement outfit, or Alexander McQueen, chosen by the Duchess of Cambridge for her wedding gown, or even Vivienne Westwood, who created Eugenie’s outfit for her cousin, the Duke of Cambridge’s wedding. We also think that she’ll wear her mother’s York tiara, as it’s tradition for a royal bride to choose a tiara from the family collection. The York tiara was a gift from the Queen to Eugenie’s mother, Sarah Ferguson, and worn on their wedding day in 1986.

The theme

Eugenie is an ambassador for Project Zero, an initiative committed to protecting the seas from single use plastics, so, along with their home, Eugenie and Jack’s wedding will also be plastic free. Eugenie has declared that, “We’ve got to look after this planet,” so there’ll be no plastic drinking straws, flower stands or decoration, and no sequins to be seen!

The wedding party

Announced as bridesmaids have been Robbie Williams and Ayda Field’s daughter Theodora as well as Princess Charlotte, Maud Windsor, who is Eugenie’s goddaughter, and Ines de Givenchy, daughter of a family friend. Page boys will be Prince George and Louis de Givenchy. Maid of honour, of course, will be Eugenie’s sister Beatrice, who according to Eugenie, is used to going in first at parties and having her sister follow, so the wedding will have a familiar entry for the sisters!

The guests

Eugenie and Jack are good friends with Ellie Goulding, so there might be a set in there for her at the reception! We also expect to see Cara Delevigne in attendance, as well as George and Amal Clooney, as Jack is the UK ambassador for George’s Casamigos Tequila brand. As well as the royal family, the couple have invited 1,200 members of the public to the grounds of Windsor Castle to share their special day with them. They will also take a carriage procession through Windsor High Street.

Stationery

“We saw that the evening reception invitation was modern and less formal in comparison to the wedding day invitation. The evening invitation used a hand-drawn illustration of Frogmore House, which holds a special place in the heart of the couple. At Ananya, we feel that illustrations and drawings will increase in popularity now. Illustrations could be of the venue, the couple or the theme of the wedding if there is one.

“The invitation had M + H on the front which was used as Meghan and Harry’s own personal marque or monogram. It may well have been used for other items at the wedding reception and could be used by the couple going forward. It is interesting that the order was M + H with Meghan’s initial first. This suggests that the feminist Duchess of Sussex wanted her name first despite male members of the Royal Family traditionally being named first on any invitations.

We believe that there will be a trend to find unique and creative ways to hand finish a stationery design, to really wow guests with that experience of artisanal craftsmanship. When designing new collections, or working on bespoke suites, we at Ananya love enriching our stationery with intricate and meaningful detail, whether it’s in the design, the textures, or the wording.

The Royal Wedding demonstrated how to incorporate elements of different cultures into the ceremony. This is something that we believe wholeheartedly at Ananya where we embrace different cultures and weave aspects of their heritage harmoniously into the stationery. We expect to see increased awareness and implementation of this going forward, with the confidence that it is important and okay to represent both cultures in a wedding”.

Cake

“One of the biggest trends we are expecting to see in forthcoming weddings are couples moving away from the traditional wedding cakes with tiered layers of fruitcake and white royal icing and, like Harry and Meghan, using seasonal ingredients instead. Elderflower and lemon cakes are certainly due to growing in popularity but a big trend will be seasonal inspired creations and flavours such as Unique Cakes by Yevnig’s Strawberry Champagne cupcakes which make perfect spring-inspired wedding favours and for a more wintery theme there’s always red velvet or Yevnig’s incredible Guinness cake!

Florals

“Another big trend will be elaborate floral decorations and flower walls will continue to grow in popularity. Flower walls create beautiful backdrops and can work anywhere you would like to draw attention to, from wedding cakes to your own photo booth, they are also a great way to incorporate your chosen colour scheme/theme and to bring the outside in.

Food

Finally, we’re expecting to see lots of couples looking at alternative ways of serving food to their guests, moving away from the traditional three-course Wedding Breakfasts and traditional evening buffets and opting for something unique and less informal like bowl food and paella pans or pizza ovens”.

Dress

The most obvious area for inspiration and trendsetting is that dress.

After so much speculation about what the wedding dress would look like, Meghan kept it simple, classic and understated with a sleek silk cady bracelet-sleeved, bateau-necked gown. We’ve always believed that the less is more approach is a winner, and classic luxury doesn’t have to mean overly embellished or ostentatious. In the history of Royal brides, this is quite a break from tradition, so we applaud you, Meghan. We are fully expecting to see a lot of boat-necked gowns over the next year or two!

Understated bouquet

Yes, the arrangements by Philippa Craddock at the Chapel were pretty impressive, but we have big respect for Meghan’s decision to keep the bouquet simple. Her small arrangement consisted of sweet peas, lily of the valley, astilbe, jasmine and astrantia. Apparently, the blooms were even picked the day before by Prince Harry. This is such a simple idea, but just a gorgeous heartfelt gesture that any couple could follow on their big day. An absolute winner for brides and grooms wanting to keep the budget under control, but still, have that personal touch.

Little ones

There’s nothing worse than an already stressed bride trying to manage all her friend’s expectations when allocating roles. So, clever Meghan avoided all the potential fall out caused when choosing bridesmaids by not having any! Instead of opting for the never-failing cuteness of ten little ones – now who doesn’t love a flower girl and page boy squad?

Independence

We were pretty impressed by Meghan walking herself into the chapel and down the aisle, well most of it, on her own. That takes some courage, so brides, be inspired by this modern, confident young woman.

Speeches

It’s not the rarity that it used to be, but a bride making a speech is still not overly common. The groom’s father, groom and best man all have their place, but why should this be the exclusive rite of the men? We’re all for it, and reckon a whole squad of confident, speech smashing brides will have been inspired by Meghan!

Cake choices

Fruitcake is still the traditional choice, but more and more couples are opting for something different. We’re pretty sure there will be a heavy demand at cake makers for lemon, elderflower and lemon curd combinations over the next few months.

We think that this royal wedding will have a major impact on the trends over the next year or two. Meghan and Harry managed to balance tradition with a healthy dose of 2018. It’s the small, personal touches that make all the difference, and the beauty of this wedding is that there are plenty of opportunities to be inspired without perhaps the budgetary investment of the Royal Couple.

Light and zesty

Harry and Meghan chose a light sponge with elegant flavourings – lemon curd made with Amalfi lemons and an elderflower syrup made from elderflower cordial from the Sandringham estate. Claire Ptak of Violet Cakes, a local London bakery, put the creation together, having spent time with the couple to take their ideas and create something they would be delighted with. It was decorated with fresh roses and peonies (Meghan’s favourite flower), and presented in a non-traditional way, in golden urns and charger. We love the royal couple’s break with tradition. A light and airy lemon and elderflower cake is the perfect choice for a summer wedding.

Fresh and fruity

If you want something fresh and delicious, but aren’t a fan of lemon, a perfect alternative for a summer wedding has to be strawberries and cream. Quintessentially British, this cake would give a perfect pop of colour and look stunning as a centrepiece of any outdoor wedding.

Traditional twist

If you love a traditional aged fruitcake but still want to keep a modern twist, think about a cool way to present the cake. With a boozy, gorgeous fruit cake comes fondant and icing – and a really versatile range of options for decoration. We adore these fresh interpretations of an old school wedding cake.

Dark and decadent

If you just can’t get enough chocolate, but feel that a brown cake may be a little dull, there’s plenty of options for you to make it look stunning. Fresh flowers, awesome mirror glazes and decoration will ensure that your chocolate cake looks epically sensational.
