She holds a Grande Diploma in Patisserie and Confectionery from Westminster London, where she trained under Chef Yolande Stanley MCA.
She is a member of The Association of Pastry Chefs and also the British Sugarcraft Guild. Joanna now specialises in making modern and classical, beautiful bespoke wedding cakes from her design studio and professional kitchen in Crowborough, East Sussex. Joanna likes to create truly bespoke designs, pulling in various techniques, such as; Royal Icing piping, applique, pastillage, sugar flowers, ruffling, quilting, brush embroidery, hand painting and modelling, replicating details on the wedding dress, the shoes, venue and flowers until a perfectly unique piece is created. It is very important to Joanna to create the Perfect Cake for each couple's dream wedding day and each cake will be perfectly moist and beautifully presented.
High-quality craftsmanship is combined with artistic style and excellent baking skills to create these beautiful wedding cakes. Above all else, Joanna will work with each of you to give you exactly what you dream of when you imagine your perfect wedding cake. For those couples who dream of a slightly alternative wedding cake, Joanna specialises in French Classical Croquembouche, filled with light mousseline and creams, these can be traditionally decorated with nougatine and Royal Icing on request. Delivery to other areas of the Country is also possible with planning, on request.
