The Signature Cocktails, masterminded by talented Bar Manager Sebastiano Scarpa and his team, resulting from extensive research of ingredients and different mixology techniques. The tantalising list of new tipples includes The Gentleman, inspired by the history of famed Venetian and businessman Giovanni Stucky – this cocktail is a twist on the classic martini inspired by the rich heritage of Molino Stucky and its gin, thyme-infused olive oil and pasta. Stucky 1895 Gin takes its name from the last great project of Giovanni Stucky, realised alongside architect Ernest Wullekopf in 1895. Distilled from a proprietary secret recipe, the gin comprises traditional botanicals such as juniper, Bengal pepper, and citrus peel.

The Tower is a new take on the Bloody Mary with whisky-pleated essence and tequila in a tall glass, recalling the iconic, red-bricked tower of the magnificent Molino Stucky building. Alcohol-free options include Sunnyside, a vegan and zero-waste mocktail crafted with aquafaba, mango and 0% citrus distillate recalling the sunlight-bathed shores of Giudecca Island, and Good Vibes, a sweet and elegant sip made with homemade coconut syrup that is reminiscent of the feel-good vibes and floating vibrations for which Skyline is known. For the ultimate Italian aperitivo, Fusion blends the classic Aperol Spritz, Spritz Select, Negroni and Prosecco, providing a brand-new aperitivo experience to ignite the senses. “We are very proud of our new Signature Cocktail Menu here at Skyline Rooftop Bar,” commented Scarpa. “Our bar has long been held as one of the best spots in the city for visitors and locals alike to watch the sunset, and therefore, it’s only right that we provide the ultimate mixology experience to match!”
