Creating decorative ornaments out of sugar has been described as early as the late medieval periods. By the 17th century, techniques existed to make all kinds of detailed ornaments- including flowers. The first “modern” wedding cake featuring sugar flowers is believed to be from the marriage of Prince Leopold in 1882. He had a tiered cake decorated in royal icing and covered in sugar flowers, doves, horseshoes and bells
