1 VENUE – When choosing a venue the first thing to consider is the amount of space required to set up the stalls. Secondly, always check with the venue that live cooking will be allowed and all health and safety procedures for this are in place. Greenleaf has a whole host of venues with both indoor and outdoor space that will fulfil these requirements. It is very important that the venue has a fully operational kitchen and one that the Chefs have all the professional cooking equipment and services within.
2 STANDING OR SEATED?
The decision is yours but takes into consideration not only your preference but also your guests’ needs.
For an informal reception opt for a standing service, allowing guests to mingle and socialise whilst enjoying the great variety of cuisines on offer. The stalls can be set across the whole of the room replicating the traditional street stalls from around the world.
For a more formal setting opt for the seated service. The stalls can be set around the perimeter of the room with guest tables placed in the centre. This option is ideal for those of your guests that may be elderly or those with younger children.
3 VARIETY OF CUISINES -There is currently such a huge range of options you will be spoilt for choice! Choose menus that reflect your personality, heritage and background or opt for menus that reflect the diverse world we live in and choose stalls from all corners of the world. We at Greenleaf recognise that there are times when that extra special touch is required to help you think outside the box, our chefs and events consultants will help you create stalls, Canapés and dishes to cater to all your needs and those of your guests. We have even gone as far as developing a Pizza Samosa for an Italian, Indian Wedding as a fusion starter.
4. CATERER – By choosing a reputable caterer you will be provided with the quality and service that you deserve. Additionally, speak to family and friends who have been through the process before, they will have done the research already so should be able to help point you in the right direction.
We would advise that you should look out for the following when you choosing your caterer: Length of time they have been in business; a question which awards, accolades, and industry standard certificates they have obtained. This will be a good indicator of their commitment to the industry; make sure the meeting takes place at their offices.
Another good source of information is the venue, as most will have a preferred caterers list. When looking into caterers you want to opt for one with plenty of experience and with a good reputation – check out their references and testimonials, if they don’t have any, then there’s probably a good reason why!
